Creamy Lemon or Lime Pie

Ingredients

1 pie crust


2 (14 ounce) cans sweetened condensed milk

3/4 cup lemon juice or lime juice

4 large egg yolks

Zest from 1 lemon or lime (optional)

Pinch of salt

Directions

Preheat oven to 400°F (177°C).

Bake the crust for 15 minutes.

Whisk the sweetened condensed milk, juice, and egg yolks together. Pour into warm crust. If desired, sprinkle with zest.

Turn the oven down to 350.

Bake the pie for 20-21 minutes or until only slightly jiggly in the center. You want it mostly set.

Remove from the oven and allow to cool completely on a wire rack. Once cool, cover and chill for at least 1 hour (and up to 3 days) before serving.

Top with whipped cream before serving. Store leftovers in the refrigerator for up to 1 week.
